Well, I think it's because you get to see the whole girl without part of her being covered or obscured by the killer, such as with a straddle strangle. Having her elevated on a table also provides many more camera angles than if she was lying on the floor. Of course, the breast jiggle is also another good reason for this position. :D

To me there is nothing better than a long neck stretched back with a cord wrapped tight around it, with the heroine's faces twisted in pain trying to breath.
